White Chicken, Cilantro and Lime Chili

Today on the west coast it is a scorcher and I just can’t bring myself to stand in front of a BBQ, let alone a sweltering oven or smoking stove top. So tonight’s dinner will make use of my 80’s crock pot, that is adorned with a dusty rose and avocado floral print. This light and refreshing chili requires little hands on time, and has become a staple in our house on those busy nights. The White chicken, Cilantro and Lime chili is so revered that tonight my hubby is using his break to swing by the house, pick up a bowl and head back to the office. Just take one bite, I am sure you will be as equally as addicted as we are.
